Ingredients

  • 1.5 cups basmati rice
  • 2.5 cups water
  • 1 teaspoon cumin seeds
  • 2 cloves garlic chopped
  • 1/2 teaspoon salt
  • 1 teaspoon oil
  • 1/2 medium onion chopped
  • 2 cups mixed vegetables (I used frozen ones as I was too lazy .. so carrots, corn, peas, bell pepper, green beans etc)
  • 1 inch ginger chopped
  • 1 Serrano pepper
  • 2 bay leaves
  • 4-5 cloves
  • 1 inch cinnamon stick
  • 3 cardamom pods
  • 1 teaspoon salt
  • 1 dried red chili
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon poppy seeds
  • 1/2 teaspoon turmeric
  • pinch of asafetida (hing)
  • 2 teaspoons saffron water (pinch of saffron soaked in warm water)
  • 1 cup cilantro/coriander leaves chopped
  • 1 cup mint leaves chopped
  • 2-4 teaspoons lemon juice
  • fried cashews and onions for garnish
