  • 1 1/2 Tbsp olive oil
  • 1 large stalk leek (chopped)
  • 8 oz white button mushrooms (sliced)
  • 3-4 garlic cloves (minced)
  • Salt, black pepper, and chili flakes (to taste)
  • 2 1/2 Tbsp chopped fresh tarragon (or parsley)
  • 1/4 cup dry white wine (or vegetable broth)
  • 1 tsp tamari (or coconut aminos)
  • Dairy-free cream (to taste (optional for a creamy sauce))
  • Fresh lemon juice
  • Vegan Parmesan cheese (to sprinkle)
