  • 260 grams all purpose flour ((2 1/8 cup))
  • 105 grams light brown sugar ((7/8 cup))
  • 65 grams white granulated sugar ((1/3 cup))
  • 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 1/2 tsp sea salt
  • 37 grams silken tofu ((2 1/2 tbsp--you can substitute yogurt))
  • 62 grams aquafaba ((1/4 cup--you can substitute yogurt))
  • 225 grams mashed overripe bananas ((~2 cups))
  • 113 grams melted vegan butter ((1/2 cup))
  • 80 grams vegan sour cream or vegan yogurt ((1/2 cup))
  • 1 tbsp vanilla extract
  • 2 tbsp brandy
