Tempeh Sausage & Kale Stuffing

Ingredients

  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 garlic clove, (minced)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon fennel seed
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1 8 ounce package tempeh, (cut into 1/2 inch cubes)
  • 1 tablespoon olive oil
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped shallots, (2 to 3 shallots)
  • 2 garlic cloves, (minced)
  • 1/2 cup dry white wine
  • 1 teaspoon dried thyme
  • 1/2 cup vegetable broth
  • 4 cups kale leaves, (torn into 1 to 2 inch pieces)
  • 2 tablespoons ground flaxseed
  • 1/3 cup water
  • 6 cups 1 inch bread cubes, (about 1/2 loaf, I used multigrain, but use whatever is your favorite)
  • Dalt and pepper to taste
