- 1/2 cup warm unsweetened almond milk
- 1/2 cup coconut oil, melted
- 1/4 cup + 2 tablespoons cup lemon juice
- 2 tablespoons flaxseed meal
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 2 cups gluten-free all-purpose flour (we used this one; you can also sub all-purpose flour)
- 3/4 cup organic cane sugar*
- 1/3 cup poppyseeds
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup aquafaba (chickpea brine aka liquid from canned chickpeas)
- 1/4 teaspoon cream of tartar
- 1 cup organic powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon water
