Ingredients

  • 1/2 cup warm unsweetened almond milk
  • 1/2 cup coconut oil, melted
  • 1/4 cup + 2 tablespoons cup lemon juice
  • 2 tablespoons flaxseed meal
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free all-purpose flour (we used this one; you can also sub all-purpose flour)
  • 3/4 cup organic cane sugar*
  • 1/3 cup poppyseeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup aquafaba (chickpea brine aka liquid from canned chickpeas)
  • 1/4 teaspoon cream of tartar
  • 1 cup organic powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon water
