- 1 tablespoon avocado oil (or cooking oil of choice; or sub vegetable broth for oil-free)
- 3/4-1 cup diced yellow or white onion
- 1/2 cup diced red bell pepper
- 4 large garlic cloves, finely minced
- 2 cups long-grain white rice
- 2 cups vegan chicken broth (we used this one)
- 2 cups tomato sauce
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pink himalayan salt
- 1/2 teaspoon dried oregano
- Freshly ground black pepper, as desired
- 1/3 cup freshly chopped cilantro, for garnish
- Lime, cut into wedges (to serve)
