- 3 cups low-sodium vegetable broth (or water)
- 2 Persian cucumbers
- 1 sweet pepper ((color of choice))
- ½ cup cherry tomatoes
- 1 small red onion
- ⅓ cup fresh parsley
- 2 oz arugula
- 2 small radishes
- ¼ apple
- ⅛ cup sunflower seeds (or chopped nuts of choice)
- 3 tbsp tahini
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 2 tsp tomato paste
- 2 tbsp lime juice
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt & pepper (to taste)
- 2-4 tbsp water (to thin)
