Ingredients

  • 1 cup dried brown lentils ((see notes))
  • 3 cups low-sodium vegetable broth (or water)
  • 2 Persian cucumbers
  • 1 sweet pepper ((color of choice))
  • ½ cup cherry tomatoes
  • 1 small red onion
  • ⅓ cup fresh parsley
  • 2 oz arugula
  • 2 small radishes
  • ¼ apple
  • ⅛ cup sunflower seeds (or chopped nuts of choice)
  • 3 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 2 tsp tomato paste
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Salt & pepper (to taste)
  • 2-4 tbsp water (to thin)
