Vegan Sushi Rolls + Sushi Sandwiches - Easy Recipe

Ingredients

  • 1 ⅓ cup sushi rice
  • 1 ½ cup water
  • 1-2 tbsp rice vinegar
  • ½ tsp salt
  • 1 tbsp sugar (or agave syrup)
  • 6 nori leaves
  • 3 tbsp vegan herb cream cheese (homemade recipes are linked in the text above)
  • 1 cup fresh baby spinach
  • 1 avocado (pitted and finely sliced)
  • ½ mango (peeled, pitted and finely sliced)
  • 12 dried tomatoes (finely chopped)
  • 3-4 tbsp walnuts (or other nuts/ seeds, *see recipe notes)
  • 1 recipe dipping sauce
  • scallions (finely sliced)
  • sesame seeds

Instructions

1. Add sushi rice and water to a pot, bring to boil, reduce heat, cover and cook 10-15 minutes. Steam uncovered 5 minutes, transfer to bowl and cool. 2. Combine rice vinegar, sugar, and salt in a small saucepan. Bring to boil until dissolved. Cool, then fold gently into rice. 3. Finely slice vegetables and prepare filling ingredients. Coarsely chop walnuts and optionally toast briefly. 4. For Maki rolls: Place nori sheet on bamboo mat. Spread rice evenly, leaving a border at top. 5. Top with cream cheese, spinach, avocado, mango, tomatoes, and walnuts. Moisten nori ends and roll using mat with light pressure. 6. Cut roll into equal pieces with sharp knife. 7. For Onigirazu: Place nori on mat, add rice in center, top with fillings. Fold corners toward center, press together. 8. Flip, shape, and let sit before cutting in half. 9. Garnish with scallions and sesame seeds. Serve with dipping sauce.
