Ingredients

  • 1 small head cauliflower, or 3 cups riced cauliflower
  • 1 cup walnuts
  • 8 ounces cremini or white mushrooms
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 tablespoons low sodium soy sauce
  • 1 teaspoon vegan worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt, to taste (I used 3/4 teaspoon)
  • 1 cup frozen peas, thawed
  • 1 cup frozen corn, thawed
  • 1 batch Vegan Mashed Potatoes
