The Best Vegan Waffles

Ingredients

  • 2 cups flour (all-purpose, wheat, spelt or gluten-free flour)
  • 2 tsp baking powder
  • 1 pinch of salt
  • ¼ cup sugar (variety to taste)
  • 1 cup soy milk (or other plant milk)
  • 2 ½ tbsp oil (or vegan butter)
  • ¼ cup sparkling water (or a little more milk + 2 tsp lemon juice or apple cider vinegar)
  • 1 tsp vanilla extract (or cinnamon)
  • 1-2 tsp coconut oil (for the waffle iron)

Instructions

***Note: Feel free to check out the recipe video + step-by-step pictures above!** 1. Combine flour, baking powder, salt and sugar in a bowl. Add soy milk, oil, sparkling water and vanilla extract and stir until just combined. Then let it rest for at least 5 minutes so that the batter becomes thicker and fluffier. 2. Meanwhile, preheat the waffle iron and brush with coconut oil. 3. Once the waffle iron is hot, pour in 1-2 large spoonfuls of batter and bake waffles. 4. Serve the waffles with homemade rhubarb compote, coconut yogurt and strawberries as you like or enjoy with other toppings!
