Ingredients

  • ⅔ cup soy milk (lukewarm)
  • 2 tbsp raw cane sugar (or other sugar (*see notes))
  • 2 ¼ tsp dry yeast (or ½ cube fresh yeast (21 g))
  • 4 cups all-purpose or spelt flour (or gluten-free flour (*see notes))
  • 1 ½ tsp salt
  • ½ cup water
  • ⅓ cup soft vegan butter (or oil (*see notes))
  • 4 tbsp soy cream or soy milk (for brushing)
  • 1 pinch of turmeric (optional for a more yellow color)
  • Burger Patties (of your choice)
  • Lettuce
  • Tomatoes
  • Onions
  • Ketchup

Instructions

1. Warm soy milk to 104F, add sugar and yeast, stir to dissolve, and set aside for 3 minutes until foaming. 2. In a large bowl, combine flour and salt, create a well in the center, add yeast mixture and water, then incorporate vegan butter pieces and mix until combined. 3. Knead dough by hand for 5-8 minutes until smooth, or use a stand mixer with dough hooks. 4. Form dough into a ball, place in an oiled bowl, brush with water, cover with a tea towel, and let rise 45-60 minutes until doubled in size. 5. Divide dough into 9 equal pieces (100g each), form into buns, place on parchment-lined baking tray with space between each, cover, and let rise 20-30 minutes. 6. After 15 minutes of rising time, preheat oven to 356F (180C). 7. Brush buns with soy cream mixed with turmeric for golden color, then bake for 25-30 minutes.
