Three Michelin Stars. Chef Alain Passard transitioned the menu to entirely plant-based in July 2025 - vegetables, fruits, flowers, herbs, with honey from his own beehives as the single exception. The first three-star chef in France to remove all meat, dairy, eggs, and fish. Lunch menus from €260, dinner à la carte €60-€160. Produce comes from Passard's own organic gardens in the Sarthe region.
